Cherries are a very important fruit for the Chilean export market as they are ready at a time of year when there are no cherries in the North American and European markets. The cherries can therefore benefit from a market opportunity where there is no competition. In the Araucanía region, the cherry harvesting is carried out later than in the central regions which prolongs the country’s season.

Chilean cherries are available as early as October. However, most of the production occurs from the middle of November until the end of December.

Cherry bing
This is a very firm cherry, juicy, with a shiny skin and a deep or blackish red colour. The cherry’s flesh is white, around the stone, and is a bit crunchy.
Cherry Lapins
Cherry Lapins
Lapins is a big sized cherry. It is very firm, black coloured, sweet, juicy and round. It is harvested 10 days later than the Bing variety.
Cherry Van
Cherry Van
A very resistant variety, similar to the Bing in taste and firmness. It is slightly smaller and survives better at lower temperatures.
One hour of exposure to ambient temperature can damage them more than 24 hours to 32º F. For this reason it is essential to maintain them refrigerated.
 
Storage
It is very important: to keep cherries refrigerated in order to protect their texture and flavour.

Display
Make sure that stem is green with the leaf still attached.
Cherries should have no imperfections; they have to be firm, round and a brilliant scarlet colour.
A complete ripened cherry is heavy, juicy and more substantial than a green one.
Keep the cherries in its package to avoid damage.
